I did not know Mr. Wintzell, and I am a bit surprised that I did not discover him until two years ago. I am putting him first in the shucker profile's because I think that he is the quintessential shucker, he thoroughly enjoyed his job. Something that we have in common as well as the fact that we both were raised in Mobile county. He in Bayou la Batre, me in Grand Bay. Our schools were vicious rivals in High School football. Now they have merged into one school. And we both fancy ourselves writers. HIs legacy for quotes of his whit and wisdom are left on signs that cover the wall's of the restaurants. And his book Oysters and Politics is a fun autobiography that lets you see a little inside a man who enjoyed shucking oysters and talking with folks. Beau Bonfe behind the bar at the Original Wintzell's on Dauphin st. is a natural. This twenty-two year old from North Alabama has been shucking oysters for only two years, but you would never know it watching him work. Pretty good jiver too for his age. He claims that he has learned a lot from his co-workers Russel who is the companies shucking trainer and Mr. Willie Brown who has been shucking at the Dauphin St. oyster bar for over 40 years. While Beau like to eat the oysters has says Mr. Brown does not. Quoting the master " I don't know how many I shucked but I can tell you how many I have eaten."
